The winemaking process starts with the unique terroir of the Russian River Valley, the combination of soil, climate, and topography. Then comes harvest, which happens at night when the air is at its coolest. Grapes are picked by hand before entering a proprietary cooling tunnel that keeps the fruit at 50 degrees Fahrenheit, preserving acidity and reducing oxidation. Then, the grapes are hand-sorted for quality and pressed slowly to avoid any bitter tannins that can enter the wine from skins, stems, or seeds. The barrels where the wine is aged are built precisely from select French oak trees.
