Fall into Seattle's seasonal cocktails this autumn

Carolyn Sellar, a spirits specialist and founder of Seattle's Adventures in Whisky, helps us discover new must-try fall cocktails!

There's just something about fall when the leaves start turning colors and there's a crisp breeze in the air. Now that autumn has arrived, and the nights are longer and cooler, a great way to warm up and find a cozy spot is at the great cocktail bars in Seattle and beyond. There are so many new and exciting drinks on fall cocktail menus around town that it is impossible to pick a favorite.

These delicious fall cocktails go way beyond a simple Apple Brandy Hot Toddy and they showcase the creativity and talent we have in the Emerald City. I picked a few great cocktails to help motivate you this fall, to not only go to your favorite local watering hole but to find new and exciting destinations to explore and add to your fun-filled autumn itinerary.

Baker’s on Sunset Hill – 6408 32nd Ave. NW, Seattle, WA 98107

Baker's is a contemporary interpretation of the neighborhood bar in Sunset Hill. If you haven’t been here before, then you should add it to your list. Baker’s features high-end cocktails & spirits with delicious food and a "my local bar” vibe, all while having an incredible secluded backyard garden patio space! Baker’s is the vision that became a reality of owner Brian Smith and his love of bringing craft cocktails to your neighborhood bar. Baker’s elevates cocktails to the next level and explores new exciting cocktail creations.

Busy Bee is their fall seasonal love letter to the tequila sour cocktail that incorporates a lovely Middle Eastern-inspired spice blend that enhances a beautiful autumn flavor and color experience.

Aqua Ardens Vol. 3 (PSL Edition)

If we head a bit north of Seattle to Bothell (oh come on, it’s only 5 miles north of the Seattle City limits!), there is an eclectic bar with a speakeasy vibe that's big on craft cocktails, small plates, and wine. Kro Bär opened their doors earlier this year and this perfectly-inspired spot commemorates the "murder" of beautiful crows that migrate in and out of town each morning and night! This bar is creatively themed for the fall season and is a *must-add* to your destination list this autumn. Kro Bär changes their menu seasonally, and they have tons of fresh and unique flavors and offerings. All of which are crafted by "Spiritual Advisor" Cameron MacDonald and Chef Dan Yule.

Nothing feels like fall has arrived more than pumpkin spice, and they have created a masterpiece with the play on the PSL called "Aqua Ardens, Vol.3 (PSL Edition)." This tasty drink features Blanco Tequila, a Pumpkin Chai Shrub, Bourbon Cream, and Coffee Liqueur; all topped with a Coffee Vapor Bubble!

Cinn City Dreams

Triangle Spirits - 3507 Fremont Pl N. Seattle, WA, 98103

With their incredible glowing sign above the bar that says “PRESCRIPTIONS,” Triangle Spirits has been an institution in the Fremont neighborhood and a historical bar since the 1940s. This iconic establishment has been a long-standing part of the Seattle cocktail scene and their new fall cocktail menu features the whiskey drink, Cinn City Dreams that makes you want to savor every sip!

This autumnal cocktail was created by Seattle’s legendary bartender Derek Jeffries, who has been crafting delicious cocktails for over a decade in our incredible city. Derek said, “My inspiration comes from walking into a cafe in the evening to aromas of baked pastries and sweets. I wanted to take some of those delicious flavors into a fall cocktail that is layered in those aromas!"

Jeffries was just recognized at the Moore Theatre this month as a Culture Shaker by Jack Daniels. Next time you are in Fremont, stop by Triangle Spirits to congratulate Jeffries and try his amazing fall-inspired cocktail, Cinn City Dreams!

Busy Bee at Baker's

  • 2 oz Ras El Hanout-infused Pueblo Viejo Blanco
  • .25 oz Giffard Passionfruit Liqueur
  • .50 oz Honey Syrup
  • .75oz Fresh Lemon Juice
  • Method: Shake, Fine Strain
  • Glass: Coupe
  • Garnish: Edible Flower

Ras El Hanout-infused Pueblo Viejo Blanco - 25g of Ras El Hanout per liter of Blanco tequila. Infuse for 15 minutes and fine strain through cheesecloth.

Honey Syrup - Equal parts honey and hot water by volume, stirred vigorously to mix. Chill and refrigerate.

Aqua Ardens Vol. 3 (PSL Edition) at Kro Bär

  • 1.5 oz Tromba Tequila Blanco
  • 1 oz Pumpkin Chai Shrub
  • .75 oz Rock Town Bourbon Cream
  • .5 oz Two James Coffee Liqueur
  • 3 Dashes Bitters Mix (Australian Barrel Spice and Coffee Bitters)
  • Coffee-infused vapor bubble

Cinn City Dreams at Triangle Spirits

  • 1.25 oz Jack Daniel’s Bonded Whiskey
  • 0.75 oz GlenGlassaugh Revival Scotch Whisky
  • 0.25 oz. Cinnamon-Banana syrup
  • 2 dashes Ball & Claw Cherry Bitters
