Copper River Salmon has arrived! Gaard Swanson met up with Chef Pat Donahue and Tim Ferleman, resident seafood expert and head buyer, to learn about Copper River salmon and what makes it so special.
Prized for their high Omega-3 fatty acid content, Copper River salmon is considered one of the finest salmon available! This high oil content is the result of the fish preparing itself for the lengthy journey up the Copper River to spawn. As a result, the high oil content makes this fish melt in your mouth, and it's an excellent feature in any salmon recipe.
Anthony's Restaurants secures Copper River salmon directly from the fishermen in Alaska to ensure they serve it to their guests within hours of being caught. Guests are able to enjoy a variety of entrees that are centered around fresh, wild product that varies by day.

- Fresh Wild Alaska Copper River King Salmon medallion, chargrilled with sundried tomato basil butter and served with savory cornbread pudding and seasonal vegetables
- Salmon Salad, featuring chargrilled and citrus-glazed salmon served on romaine and field greens, opal apples, and hazelnuts with citrus shallot dressing and local rhubarb-strawberry relish
