Kelly Sparks of Queen Bee Mixology is graciously sharing a new cocktail with us every week, just in time for Happy Hour. Don't be afraid of the dragon — this cocktail is scary only by name. The prosecco helps bring out the fruit flavors to enhance the dragon fruit, while the bourbon brings the fire. It's a wonderful balance, just in time for Spooky Season.

  • Dragon fruit
  • Bourbon
  • Mint simple syrup
  • Peach bitters
  • Prosecco

  1. Peel and cube the dragon fruit
  2. In a champagne flute, add 5-6 chunks of dragon fruit, 1.5 oz. bourbon, 1 dash of peach bitters, .5 oz. of mint simple syrup and 3-4 oz. of prosecco
  3. Give it a small stir
