If you watch or read Seattle Refined with any regularity, you know we always go on and on about how what we eat reflects our culture just as much as our clothes or music. Case in point...Thai food. Before the 1980s, Seattle didn't even have a real Thai restaurant. But today, the popularity of Thai food is soaring. In fact, a recent survey shows Thai restaurants are even more popular than pizza joints here in Seattle. When we read that, we were fit to be Thai'd. We put out the call on social media to send us your favorite Thai spots. The response was overwhelming with dozens of recommendations. We ventured out to visit three:

May Kitchen + Bar
When it comes to some of the most amazing Thai food in Western Washington, don't skip May Kitchen and Bar or you'll really miss the boat. No seriously - you need a boat to get there, it's on Vashon Island but SO worth the trip. Everything May serves is made from scratch from her own recipes - from her special green curry to Phad Thai hand-prepared in a tableside performance.
