Ingredients:

  • Simple Truth Rotisserie Chicken
  • Simple Truth Organic Quinoa (freezer section! Food hack!)
  • Simple Truth Organic Blueberries
  • Organic Avacado
  • Marcona Almonds (Murray's Cheese Shop)
  • Goat Cheese (Murray's Cheese Shop)
  • Blend of Simple Truth Organic Arugula and Organic Spinach
  • Firefly Kitchen Yin Yang Carrots
  • Spanish Figs (Murray's Cheese Shop)
  • Simple Truth Organic Salad Dressing of your choosing (Produce Department)

Directions:

  1. Shred the rotisserie chicken.
  2. Steam the quinoa in the microwave according to package directions.
  3. Toss the chicken, quinoa, and remaining ingredients together in a bowl for a healthy, colorful salad!

BBQ Chicken Tacos

Ingredients:

  • Simple Truth Rotisserie Chicken
  • Mission Street Tacos Corn Tortillas (Grocery Department: available in organic corn, flour and GF)
  • Fresh Chef Prepared Coleslaw (Deli Chef Case)
  • Freshly Jalapenos (Produce Department)
  • Fresh Guacamole (Deli Chef Case)
  • Simple Truth Organic Honey BBQ Sauce (Grocery Department)
  • Optional additions: Simple Truth Salas, shredded cheddar cheese, sour cream

Directions:

  1. Shred the rotisserie chicken and toss in sauce pan with BBQ sauce
  2. Heat the corn tortillas according to package directions.
  3. Place hot BBQ shredded chicken on the tortillas and top with coleslaw, jalapenos, guacamole and any other favorites. Enjoy!
