A Cannoli is a tube-shaped shell made of fried pastry dough filled with a sweet filling, and Tutta Bella put much effort in finding the perfect ingredients.
"We go long and far to source the best ingredients that we can, and there are no exceptions to that rule," says Executive Chef Brian Gojdics. "A few weeks ago we had a shell presented to us by one of our trusted partners in Italy, and it was just perfect."
Long and far they went! Tutta Bella will be sourcing their cannoli shells from a partner in Sicily, the home of the cannoli.
So now for the award winning question: what made this shell so perfect? Chef Gojdics says it's all about the flavor, and how they're made.
"The shell we're using at Tutta Bella has a bit of cinnamon on the shell and red wine in the pastry dough, adding a fine touch of pleasant bitterness to balance the sweetness," Che Gojdics shared. On top of that, this shell is a little bit thicker than other cannoli shells, which means you can up the ante on that cream.
