Sub sandwiches even Italians are wild about

Twelve years ago I married an Italian.

Up to that point I would have considered pasta one of my favorite foods. Marinara, meat sauce, pesto, vodka cream, stuffed pastas. You name it, I loved it. Still do! Truly, all Italian food ranks pretty high on my list of food faves. I love fancy cheese, chicken Parmesan, oil and balsamic vinegar, salads, Italian subs...you get the picture.

Ask me where I want to go for lunch or dinner and I’ll most likely cast a vote for a local Italian joint. Often, Meconi’s Italian Subs in the Olympia/Lacey area is the winner. Followed by Casa Mia, also of Olympia; Pasta Freska in Seattle; and Cristiano’s in Marysville.

But today I want to sing praises just for Meconi’s. After all, it is they who convinced my husband that someone other than his Italian family could create a perfect sub sandwich. And he’s not alone. Not by far. Meconi’s has been voted “Best Sub Shop” in The Olympian’s “Best of South Sound" every year!

Although I’m merely Italian by marriage, I’ve been eating at Meconi’s for my entire life. Growing up my dad would take me out to eat on my birthday, and every single year I picked Meconi’s. They’re nothing fancy - just a quick serve, order at the counter, and listen for your number kind of place, but their sandwiches sure know how to wow a crowd.

Founded in 1986 by Wayne and Nancy Meconi, the sub legacy continued when their daughter Maria opened the second Meconi’s location in 1993. The Meconi family set out to bring east coast subs to the west coast and there is no doubt in my mind that they succeeded! Over the years Meconi’s has expanded and evolved, and to date they serve customers out of four locations in Thurston County - downtown Olympia, Tumwater, Lacey, and Hawks Prairie.

What’s so special about these sub sandwiches? What exactly makes my husband request Meconi’s more often than his own dad’s creations?

Meconi’s subs start with fresh bread. Made at their in-house bakery, it’s no wonder the bread - the foundation of every good sandwich - makes Meconi’s subs extra special. Available in white, wheat or gluten-free, the famous Meconi’s sub rolls come standard with mayo, provolone cheese, lettuce, tomato, homemade Italian oil, and oregano. A bounty of finely sliced meat (or a vegan veggie assortment, or homemade egg salad if you wish!) round out the flavors of a classic Meconi’s sub. I don’t know the exact magic, perhaps they sing Italian tunes over each sandwich before serving, but I do know Meconi’s has sub sandwiches down to an art; an art of the Michelangelo variety.

When I order, I rarely stray from the classic turkey. It’s perfection! Especially with black olives added to the top. When I do try something different, I order the capicola - a traditional Italian and Corsican pork cold cut that is sliced very thin. My husband prefers a build your own sub with a trifecta of his favorite meats - salami, pepperoni, and bacon. He upgrades to Meconi’s “Cosmo Style” which means his sandwich gets toasted.

I’d be remiss to ignore Meconi’s dessert options. They bake their cookies in-house too! When you visit Meconi’s be sure to grab a cookie. The snickerdoodle are my personal recommendation.
