The chain was started in Taiwan in 2004 by Wu Cheng-Hsueh, who wanted to make the kind of high-quality pastry he was seeing in fancy restaurants accessible to everyone. The name comes from the temperature he believed is optimal for brewing coffee at. (Image: Seattle Refined)

Cloud Nine Creamery. Coming to Southcenter Mall in Winter 2017, Cloud Nine Creamy is the MOTHA of liquid nitrogen ice cream. Liquid nitrogen ice cream? "The incredibly smooth and creamy treat is flash frozen in seconds, reducing the amount and size of ice crystals that can damage the taste and texture of many ice creams. Add an array of fresh baked goods and other mix-ins and the magic begins to happen. The rapid freezing process is a delight for customers to witness behind floor-to-ceiling glass walls, thanks to science!" Thank you science, we need delicious sweets in our lives.
