Chef Varin Keokitvon and Beverage Director Amanda Reed change the menus weekly, taking influence from local offerings as the seasons change. Amanda uses house-made syrups, tinctures, and shrubs while Varin incorporates masterful and rustic cooking techniques inspired by his collection of travels.
Take one of their raw options on the menu now; a beautiful yellowtail made with passion fruit, avocado, cucumber, radish, and pickled peppers. The crispy bitterness of the radish and slight sweetness of the passion fruit are brought to life when sipping the citrus-forward complementary cocktail, which features white rum, cucumber, lime, and grapefruit bitters. The underlying buttery yellowtail and creamy avocado perfectly round out the brightness of the cocktail. With food and drink pairings, you don’t want an exact match, but a good balance of complements and contrasts.
Ever thought about drinking tequila with steak? The reposado tequila used in Heartwood’s pairing with their Wagyu NY Steak has a luxurious, oaky finish, with hints of caramel and vanilla, because reposado tequila is aged in oak barrels, much like whiskey or red wine. The sweet and smokey combination is enhanced with the cherry glaze, corn, onion, smoked yam puree, and grilled shishitos which accompany the 12oz steak. It’s all rounded off with a hint of spice from the cocktail’s ancho verde, a spicy, smoky and sweet chile liqueur that adds depth and a complex spice to the entire meal.
Some other playful pairings include a Jamon Iberico plate with a Spanish sherry; a rustic burger on brioche with gruyere and horseradish, paired with a farmhouse saison beer; and an Ahi tuna with crispy quinoa and spicy yellow pepper dressing alongside a Pisco-based drink that brings us right back to travels in Peru.
