And the cows at Twin Brook, they’re something special. The Staps raise their own purebred Jersey cows, which are the secret to Twin Brook’s creamy, flavor-filled milk and eggnog. Jerseys produce milk with a higher protein and butterfat content, says Larry Stap, who heads up the dairy farm and bottling facility. “It’s a higher what they call, ‘solids content,’ which makes really flavorful cheese, yogurt, and other dairy products,” he says.
It also means a thicker, more delicious eggnog…perfect for this time of year. And when you’re out shopping, you’ll know which bottles belong to Twin Brook—the trademark glass bottles are the Stap’s signature out in the marketplace.

The Stap family uses the latest and greatest technology in milking cows, including a robot milker! That’s right, cows choose when they give milk at Twin Brook. There’s a small stall that cows can enter on their own accord and the fully-automated milker will go to work (watch the video to see cow #712, or more formally known as “Sammie” demonstrate!). After the cow is done, the milk will be added to the refrigerator, and the next cow walks in.
